Zesty Summer Salad
DIETITIAN RECIPE -
INGREDIENTS:
1 cup cherry tomatoes, sliced
2 avocados, seeded and cubed
1 teaspoon fresh lemon juice
2 cooked ears of corn
3 cups lettuce, chopped
Zest from one lemon
1/4 cup Clearly by Best Choice Organic Roasted Sunflower Seeds
For the dressing:
1/4 cup Clearly by Best Choice Organic Olive Oil
2 Tablespoons fresh lemon juice
1 Tablespoon Clearly by Best Choice Organic Dijon
1/2 teaspoon Clearly by Best Choice Organic Ground Pepper
DIRECTIONS:
Place sliced tomatoes, chopped avocado and lemon juice into a medium size bowl. Cut corn from cob and add to bowl. Prepare the dressing by whisking together all the ingredients in a separate bowl or jar. Pour half the dressing over the tomato, avocado, corn mixture and gently stir to combine. In a salad bowl add 3 cups chopped fresh lettuce. Place avocado, tomato and corn mix on top just before serving. Add remaining dressing and toss. Top with lemon zest and sunflower seeds, serve immediately.
