Watermelon Wedge Salad
NUTRITIONIST RECIPE -
This single serving wedge salad is a perfect light and refreshing dish for your next summer dinner party.
2 thick cut watermelon wedges
6 mandarin orange wedges
2 red onion rings, thinly sliced
1/4 cup arugula
1 Tablespoon feta cheese
1 teaspoon Clearly Organic Olive Oil
1 Tablespoon Clearly Organic Balsamic Vinegar
Dash of sea salt
Cut watermelon wedges about 1 inch thick. Using a pairing knife remove rind. Add oranges, onion, arugula and feta cheese over the top. Drizzle with olive oil & balsamic. Finish with a dash of sea salt.
