Summer Beef Kabobs

DIETITIAN RECIPE -

Beef Kabobs with Rice

INGREDIENTS:

1/3 cup Clearly by Best Choice Organic Olive Oil  

2 Tablespoons soy sauce 

2 Tablespoons Clearly by Best Choice Organic Honey 

1 Tablespoon white vinegar 

1/4 teaspoon Clearly by Best Choice Organic Ground Ginger 

1/4 teaspoon Clearly by Best Choice Organic Garlic Powder 

1 pound beef top sirloin, cut into cubes 

8 white mushroom, cut in half 

1 small red onion, cut into wedges 

1 medium sweet red pepper, cut into 1 inch pieces 

1 medium sweet yellow pepper, cut into 1 inch pieces 

1 small zucchini, cut into 1/2 inch slices 

2 Tablespoons Clearly by Best Choice Organic Olive Oil  

1/2 teaspoon salt  

1/4 teaspoon Clearly by Best Choice Organic Ground Pepper 

Cooked Clearly by Best Choice Organic Rice (optional) 

Beef Kabob ingredients

DIRECTIONS: 

In a medium size mixing bowl add oil, soy sauce, honey, vinegar, ground ginger and garlic powder. Whisk to combine, then add cut up beef.  Cover bowl and let marinate in the refrigerator for at least an hour or overnight. Place cut mushrooms, red onion, sweet red and yellow peppers and zucchini in a separate mixing bowl. Top vegetables with olive oil, salt and pepper. Stir to evenly distribute.  On about 10 soaked wooden (or metal) skewers add cut veggies and marinated beef alternating by color. Grill kabobs over medium heat, covered until beef reaches desired doneness. About 10-14 minutes. Serve with warm rice.
