Stovetop Honey Garlic Carrots

INGREDIENTS
3 tbsp Clearly by Best Choice Olive Oil
1 lb carrots, peeled and cut into 1/4-inch diagonal slices
1/2 tsp salt
3 cloves garlic, sliced
2 tbsp Clearly by Best Choice Honey
1 tsp Clearly by Best Choice Dried Parsley
Fresh parsley for garnish (optional)
DIRECTIONS
In a large skillet with a lid, heat 2 tbsp of the olive oil over medium heat.
Add the cut carrots and salt to the skillet.
Stir the carrots until they are completely coated with oil.
Place the lid on the skillet and cook the carrots for 10 minutes.
Stir in the garlic and cook, uncovered, for 10 minutes or until carrots are tender.
Add the remaining 1 tbsp of oil, honey, and dried parsley to the mix.
Cook for an additional 4 minutes or until the carrots are caramelized, stirring occasionally.
Taste the dish and season as desired.
