Roasted Leeks with Parmesan


2 large leeks 

2 Tablespoons Clearly Organic Olive Oil 

1/2 teaspoon salt 

1/4 teaspoon Clearly Organic Ground Pepper 

1/2 teaspoon Clearly Organic Garlic Powder 

1/4 cup fresh parmesan, shredded 



Preheat oven to 400 degrees. Spray baking sheet with Clearly Organic cooking spray and set aside. Wash the outside of the leeks then cut the root and dark green tops.  Cut leeks in half lengthwise and wash between the layers.

Place leeks and 1/2 cup water in a large sauté pan with a lid. Cover and simmer on stovetop over low temperature for about 5 minutes.

Remove with tongs to drain water and place on baking sheet with the cut side up. Spread out the leeks and drizzle with oil. Sprinkle on salt, pepper, garlic powder and parmesan. Bake for 25 to 30 minutes or until leeks are tender and golden brown. Serve warm as a side dish, on a salad or mix into a pasta dish.
