There’s been a lot of talk about pasta this month from our pasta coupon (download it here: http://bit.ly/ClearlyCoupon) to our Pasta Recipe Contest (learn more here: emfl.us/w5Jd). We decided to cook and share one of our favorite recipes along the way: Pasta Primavera, found on the back of our spaghetti box. Enjoy!
8 oz Clearly Organic Spaghetti
1 cup (1-inch) diagonally cut thin asparagus
1 Tbsp olive oil
2 garlic cloves, minced
1 small yellow bell pepper, cut into julienne strips
1 small zucchini, quartered lengthwise, cut into 1-inch lengths
¼ tsp crushed red pepper flakes
½ cup Clearly Organic Chicken Broth
1/3 cup whipping cream
Salt and pepper to taste
1 cup halved cherry tomatoes
¼ cup thinly sliced fresh basil
¼ cup (1 oz) grated fresh Parmesan cheese
1. Prepare pasta according to package directions. During the last minute, add asparagus. Drain and set aside.
2. Heat a large nonstick skillet over medium-high heat. Add olive oil, garlic, bell pepper, zucchini and red pepper flakes. Sauté for 2 minutes or until tender-crisp. Stir in broth, whipping cream, salt & pepper. Cook for 5 minutes. Add tomatoes, basil and pasta to mixture, toss gently and heat through.
3. Sprinkle with Parmesan and serve.
