Pumpkin Waffles

DIETITIAN RECIPE -

Pumpkin Waffles

 INGREDIENTS: 

2 cups all purpose flour 

2 Tablespoons Clearly Organic Brown Sugar 

1 teaspoon baking powder 

1/2 teaspoon baking soda 

1/4 teaspoon salt 

2 teaspoons Clearly Organic Cinnamon  

1/4 teaspoon nutmeg  

1/2 teaspoon Clearly Organic Ground Ginger 

3 eggs 

1 1/2 cup Clearly Organic Milk 

1/4 cup Clearly Organic Honey 

3 Tablespoons Clearly Organic Olive Oil  

1 cup canned pumpkin puré 

 

DIRECTIONS:

In a large bowl stir together flour, brown sugar, baking powder, baking soda and the additional spices.

In a separate bowl whisk together eggs, milk, honey, oil and canned pumpkin.

Pumpkin waffles wet ingredients

After wet ingredients are whisked add them to the dry ingredients bowl. Stir contents until just combined. A few lumps are fine. Bake the waffles on a well greased waffle iron. The waffles will likely cook best on medium to high heat but the temperature will vary depending on the type of waffle maker. Cook until crisp on the outside.
