1 small yellow onion, chopped
2 Tablespoons Clearly Organic Olive Oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon Clearly Organic Ground Pepper
1 1/2 cups Clearly Organic Chicken Broth
1 cup Clearly Organic Long Grain White Rice
4 boneless skinless chicken thighs
4 cups broccoli florets
1 cup cheddar cheese, shredded
1/4 cup almonds, chopped
Using an electric pressure cooker select the sauté (high) option and add onion and olive oil. Sauté until onions are softened about 5 minutes. Add minced garlic and continue cooking for 2 more minutes. Season with salt and pepper then add broth and rice to the pressure cooker. Stir to combine. Place broccoli florets and chicken thighs on top of the mixture. Assemble the pressure lid, making sure the pressure release valve is in the seal position. Select PRESSURE on your machine and set it to High. Set time to 10 minutes and begin cooking. When pressure cooking is complete quick release by moving the valve to VENT. Let pressure release then carefully remove the lid. Stir in cheddar cheese. The broccoli chunks will breakdown while stirring. If desired, shred chicken using two forks. Serve topped with extra shredded cheese and chopped almonds.
