3 cups Arugula
3 cups Spring Mix lettuce
1/3 cup red onion, thinly sliced
1/2 cup Clearly Organic Walnuts, chopped and toasted
3/4 cup pomegranate seeds
1/2 cup feta cheese crumbles
1/2 avocado, seeded and chopped
For the vinaigrette dressing:
1/2 cup Clearly Organic Olive Oil
3 Tablespoons Cleary Organic Balsamic Vinegar
1 Tablespoon dijon mustard
1 Tablespoon Clearly Organic Maple Syrup
1/4 teaspoon Clearly Organic Ground Pepper
1/4 teaspoon Clearly Organic Garlic Powder
Start by making the dressing. Add all the ingredients to a jar with lid. Secure the lid and shake until all the contents are evenly distributed. Set dressing aside until ready to serve salad.
In a sauté pan add chopped walnuts. Toast nuts on medium high for 3-5 minutes or until walnuts become fragrant and slightly browned.
Remove from heat and set aside. In a large salad bowl place arugula and spring mix. Gently toss leaves then add sliced red onion, toasted walnuts, pomegranate seeds, feta crumbles and avocado chunks. Salad is best if served immediately.
Just before serving add a thin layer of vinaigrette and gently toss salad contents.
