Mini Vanilla Cheesecake Cups
NUTRITIONIST RECIPE -
1/2 cup Clearly Organic Graham Cracker Crumbs
1/4 cup plus 1 Tablespoon Clearly Organic Sugar, divided
2 Tablespoons Clearly Organic Butter, melted
1 (8oz package) cream cheese, softened
1 teaspoon Clearly Organic Vanilla
1 Clearly Organic Egg
Fruit and/or chocolate chips for topping
Preheat oven to 325 degrees. Stir together graham cracker crumbs, 1 Tablespoon sugar and butter. Press graham cracker mix into the bottom of paper mini muffin cups. Whip together cream cheese, vanilla , 1/4 cup sugar and egg with an electric hand mixer. Pour mixture into muffin cups and bake in preheated oven for 20 minutes or until cream cheese is solidified and slightly brown on the edges. Cool completely and chill for 2 hours. Top cheesecakes with fresh berries, almond butter or chocolate chips.
