Italian Pasta Salad

DIETITIAN RECIPE -

Italian Pasta Salad - Ready to Eat

INGREDIENTS:

2 cups uncooked Clearly Organic Whole Wheat Rotini Pasta

2 cups cherry tomatoes, sliced

1/2 cup summer sausage or salami, cut into small cubes

1/2 cup fresh mozzarella pearls

1/2 cup Kalamata olives

1/4 cup pepperoncini, sliced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

 

For the dressing:

3/4 cup Clearly Organic Olive Oil

2 Tablespoons white wine vinegar

2 teaspoons course sea salt

1 teaspoon sugar

1/2 teaspoon Clearly Organic Dried Basil

1/2 teaspoon Clearly Organic Dried Parsley

1/2 teaspoon Clearly Organic Garlic Powder

Pasta Salad Ingredients

 

DIRECTIONS:

Cook whole wheat rotini according to package directions. While noodles are cooking prepare the dressing. Add olive oil and vinegar to a mason jar with a lid. Place salt, sugar, and spice in a small bowl and gently stir together.  Add spices to oil and vinegar mix, secure the lid and shake vigorously to combine. Set dressing aside.

Mix Pasta Salad Ingredients

Once pasta has cooled slightly place it in a salad bowl. Add all of the ingredients into the salad bowl with the pasta. Top with desired amount of dressing. Toss to combine and enjoy!
