Honey Pumpkin Bread
DIETITIAN RECIPE -
A sure sign of fall is pumpkin bread. This delightful treat is made with wholesome ingredients so it offers a healthful spin on festive fall food.
1 cup all-purpose flour
1/2 cup whole wheat flour
1/3 cup quick oats
1 teaspoon Clearly Organic Cinnamon
1/8 teaspoon allspice
1/4 teaspoon salt
3/4 teaspoon baking soda
3 Clearly Organic Eggs
3/4 cup Clearly Organic Coconut Oil, melted
1/2 cup Clearly Organic Sugar
1/2 cup Clearly Organic Honey
2 teaspoons Clearly Organic Vanilla
1 1/2 cups pumpkin purée
Preheat oven to 350 degrees. Spray Clearly Organic cooking spray on a 9×5 loaf pan. Add flour, oats, cinnamon, allspice, salt, and baking soda to a bowl. Whisk dry ingredients together. In a separate bowl whisk the eggs together then add melted coconut oil, sugar, honey, vanilla, and pumpkin purée. Whisk wet ingredients together. Pour wet ingredients over the flour mixture and stir to combine. Place batter in the greased loaf pan and bake for 50 to 60 minutes or until the knife inserted comes out clean. Let cool for 10 minutes before cutting.
