Deliciously easy and nutritious!
2 cups Clearly Organic Old Fashioned Oats
1/4 cup Clearly Organic Sugar
1 cup pumpkin purée
1 teaspoon Clearly Organic Cinnamon
2 Tablespoons Clearly Organic Peanut Butter
2 Tablespoons dark chocolate chips (optional)
Preheat oven to 350 degrees. In a food processor place oats, pumpkin, cinnamon, sugar and peanut butter. Pulse blend for 10 seconds then scrape sides and pulse blend for another 15 seconds. Using your hands, form dough into small balls and place on a greased cookie sheet. Slightly press each ball so it sits flatter on the baking sheet. Top cookies with chocolate chips if desired. Bake for 13-15 minutes depending on desired consistency. Allow cookies to cool completely before storing in an air tight container. Variations: If you desire a sweeter cookie you can add more sugar or honey. Nuts could also be added instead of or in addition to the chocolate chips.
