This unique spin on nachos focuses on fresh ingredients and lime infused sour cream. The caramelized onions, cilantro and radishes pair together nicely for a healthy spin on a game day favorite.
2 Tablespoons Clearly Organic Olive Oil
1 large yellow onion, chopped
1/4 teaspoon Clearly Organic Chili Powder
1/4 teaspoon Clearly Organic Cumin
1 1/2 cup cooked chicken, shredded
1 bag Clearly Organic Corn Chips
1 cup Monterey Jack cheese, shredded
1/2 cup green onion, thinly sliced
3/4 cup sour cream
4 radishes, thinly sliced
1 avocado, diced
1/2 cup cilantro leaves
Hot sauce (optional)
Heat oil in a large skillet over medium heat. Add onion and spices then cook stirring occasionally, until onions are translucent and golden. This takes about 15 minutes. Add cooked shredded chicken to onions and stir contents until seasoning is evenly distributed. Remove from heat and set aside.
Place half of the chips on a sheet pan. Top with half of the cheese, onion and chicken mix. Add remaining chips, cheese, chicken, onion and green onion. Bake at 325 degrees for 10 minutes or until cheese melts. While nachos bake stir together sour cream and juice from one lime. If desired add the lime zest as well.
Top baked nachos with sour cream mix, radish slices, avocado, cilantro leaves and hot sauce if desired.
