Fall Harvest Salad with Tahini Dressing

DIETITIAN RECIPE -

Ingredients:

3 cups organic mixed greens, chopped

1/2 cup cherry tomatoes, sliced

1/2 cup Clearly Organic quinoa, cooked

1/2 cup Clearly Organic red quinoa, cooked

1 cup sweet potato, chopped and roasted

1/4 cup feta cheese crumbles

1/4 cup Clearly Organic walnuts, chopped and toasted

1 avocado, cubed

 

Tahini Dressing:

1/4 cup Clearly Organic olive oil

1/4 cup tahini

3 Tablespoons lemon juice

2 teaspoons Dijon mustard

1 teaspoon Clearly Organic honey

1/2 teaspoon salt

1/8 teaspoon Clearly Organic ground pepper

2 Tablespoons cold water

 

Directions:

Rinse and cook quinoa according to package directions. While quinoa is cooking. Add mixed greens to a large salad bowl. Then add sliced cherry tomatoes, roasted sweet potato, feta cheese, and toasted walnuts. When quinoa has slightly cooled add to greens and toss to combine. For the dressing add all of the ingredients to a mason jar and whisk thoroughly, with a wire whisk, to blend. Then secure the lid and shack to evenly distribute contents. Just before serving add avocado and drizzle desired amount of dressing on top of salad mixture.
