Healthy Grill Edition

 Hot summer days are here! Nothing says summer like spending time outside with friends and family, and eating foods cooked on the grill. Grilling can be a fast and easy way to eat when it’s hot outside. For a healthy addition, try grilled veggies like asparagus, corn on the cob, potatoes, or eggplant. These make a tasty side dish, while grilled fruits make a sweet dessert. Try peaches, bananas, watermelon or pineapple.

On hot days, no one wants to heat up the house with cooking on a hot stove or oven. Use grilled meats to make sandwiches or add to salads. Pasta salads or dishes can be made quickly and eaten cold, making a great dinner for a hot evening. My favorite summer pasta dinner is whole grain pasta with olive oil, cherry tomatoes, fresh basil, chunks of mozzarella and Parmesan cheese. Add grilled chicken or shrimp for protein.
