Crispy Chicken Tenders

DIETITIAN RECIPE -

Ingredients:

1 1/2 pounds boneless skinless chicken breast tenders

3/4 cup all-purpose flour

2 eggs, beaten

1 cup Clearly Gluten-Free Italian seasoned breadcrumbs

2 Tablespoons Clearly Organic Olive Oil

Clearly Organic Ketchup (for dipping)

 

Instructions:

Preheat oven to 375 degrees. Spray a baking sheet with Clearly Organic cooking spray and set aside. Place flour, eggs, and bread crumbs each in a separate bowl.  Dredge tenders in the flour to coat, shake off extra flour. Then dip floured tender in the beaten egg mix followed by the breadcrumbs. Arrange prepared tenders on the greased baking sheet. Bake chicken for 15 minutes flipping partway through the cook time. Since the tenders are baked they may not have the crunchy exterior you desire. To add a crispy coating. Heat 2 Tablespoons of Clearly Organic Olive Oil in a sauté pan on high heat for one minute. Add tenders to the sauté pan then cook for 2 to 3 minutes on each side until the desired crispy golden exterior is reached. The baking  allows the chicken to stay moist while cooking, then a quick pan-frying adds the crunch.
