Couscous with Peas and Mint
DIETITIAN RECIPE -

INGREDIENTS
2 tbsp Best Choice Butter
1 bag of Best Choice Frozen Peas
2 garlic cloves, chopped
1/2 tsp Best Choice Superior Selections Salt
1/4 tsp Clearly by Best Choice Ground Pepper
1 1/4 cup water
1 cup Moroccan couscous
2 tbsp fresh lemon juice
1 tsp lemon zest
2 tsp fresh mint, chopped
5 mint leaves for garnish (optional)
DIRECTIONS
Gather the garlic, mint, and lemon.
Melt the butter in a large saucepan over medium heat.
Add the frozen peas and cook for 2 minutes.
Place the chopped garlic, salt, and pepper in the pan and continue cooking for 2 minutes.
Add the water and increase the heat to medium-high.
Bring the water to a boil, and then add the couscous.
Stir the contents, cover the pan, and remove it from the heat. Let the contents sit, off the heat, for 5 minutes.
Stir in the lemon juice, zest, and chopped mint.
Fluff the couscous and stir the contents gently with a fork.
Serve the Couscous with Peas and Mint while it’s warm.
