Chicken & Cilantro Lime Quinoa
2 cups Clearly Organic Chicken Broth
1 cup Clearly Organic Quinoa
1 garlic clove, mined
2 tablespoons fresh lime juice
1/3 cup chopped cilantro
¼ teaspoon granulated sugar
Salt and pepper, to taste
4 Best Choice Boneless, Skinless Chicken Breasts
In a large pot, bring chicken broth to a boil. Stir in quinoa and cook around 20 minutes, until broth is evaporated. Once quinoa is tender, remove from heat. Stir in lime juice, cilantro, garlic and sugar. Season with salt and pepper.
Serve cooked chicken breast (according to directions on package) on a bed of warm quinoa. Enjoy!
