Carrot Cake Baked Oatmeal

DIETITIAN RECIPE -

INGREDIENTS:  

2 cups Clearly by Best Choice Old Fashioned Rolled Oats

1 teaspoon baking powder

1 1/2 teaspoons Clearly by Best Choice Organic Cinnamon

1/4 teaspoon salt

2 cups Clearly by Best Choice Organic Milk

2 eggs

1/4 cup Clearly by Best Choice Organic Maple Syrup

2 teaspoons Clearly by Best Choice Organic Vanilla

1 Tablespoon Clearly by Best Choice Organic Coconut Oil, melted

1 cup shredded carrots

1/2 cup Clearly by Best Choice Organic Raisins

1/2 cup Clearly by Best Choice Organic Walnuts, chopped

DIRECTIONS: 

Preheat oven to 375 degrees. Spray an 8×8 baking dish with Clearly by Best Choice Organic cooking spray. In a mixing bowl add oats, baking powder, cinnamon and salt.  Stir dry ingredients. In a separate bowl whisk together milk, eggs, maple syrup, vanilla and oil. Mix wet and dry ingredients together until evenly distributed. Then add carrots, raisins and nuts to the batter and fold to combine. Pour batter into greased baking dish and cook in preheated oven for 35 to 40 minutes or until knife inserted comes out clean. Let cool for 5 minutes. Serve warm with desired toppings such as yogurt or whipped cream. Store in air tight container in the refrigerator.
