Broccoli Crunch Salad
NUTRITIONIST RECIPE -
2 cups broccoli florets
1 cup red cabbage, chopped
1 red bell pepper, chopped in thin slices
1/2 cup heirloom cherry tomatoes, sliced
3 cups Organic spinach and kale mix
1/4 cup cilantro, chopped
1 cup carrots, julienned or spiralized
1/4 cup dry roasted peanuts
Dressing:
3 Tablespoons Clearly Organic Peanut Butter, melted
2 Tablespoons soy sauce
2 Tablespoons rice vinegar
2 Tablespoons lime juice
1 Tablespoon sesame oil
1 Tablespoon Clearly Organic Honey
1/2 teaspoon Clearly Organic dried ginger
1 teaspoon Sriracha or hot sauce (optional)
Combine the first seven ingredients (chopped vegetables and herbs) together in a large salad bowl. Then soften the 3 Tbs Clearly Organic Peanut Butter in the microwave. Only takes about ten seconds. Add all of the dressing ingredients to a small mixing bowl and vigorously whisk together. Pour dressing over the chopped vegetables and toss to evenly distribute. Add dry roasted peanuts just before serving.
