Almond Crunch Slaw with Sesame Dressing

DIETITIAN RECIPE -

Almond Crunch Salad

INGREDIENTS:

Slaw:

2 cups green cabbage, finely shredded

1 cup purple cabbage, finely shredded

1 cup carrots, shredded or matchstick cut

1/4 cup green onion, sliced

1/2 cup fresh cilantro, chopped

3/4 cup edamame, shelled

1 cup crunchy Chow mein noodles

1/2 cup Clearly Organic Roasted and Salted Almonds, chopped

1/4 cup Clearly Organic Raw Cashews, chopped

2 Tablespoons Clearly Organic Sesame Seeds

1 cup cooked chicken, sliced (optional)

For the dressing:

2 Tablespoons Clearly Organic Olive Oil

2 Tablespoons rice vinegar

1 Tablespoon sesame oil

1 Tablespoon Clearly Organic Granulated Sugar

1/2 teaspoon salt

1/4 teaspoon Clearly Organic Garlic Powder

2 Tablespoons Greek yogurt

 

DIRECTIONS:

Start by making the dressing. Place all of the dressing ingredients into a jar with a lid. Secure the lid and shake until evenly distributed, then set aside.

Sesame Dressing Sesame Dressing complete

Place red and green cabbage into a large salad bowl. Add shredded carrots, green onion, cilantro and edamame to the salad bowl then gently toss. Add half of the sesame dressing to the slaw then gently toss again. Just before serving add remaining dressing, Chow mein noodles, chopped nuts, sesame seeds and chicken, if desired. Enjoy!
